Özet
Lingyun Baihao (LYBH) tea, a distinguished Chinese tea tree variety yielding green, black, and dark teas, lacks comprehensive research on non-volatile metabolite variations across these types. Utilizing the LC-MS/MS analytical platform, 1,049 non-volatile metabolites (12 categories) were identified in the three teas, with flavonoids and phenolic acids being dominant. Compared with black tea, dark tea’s differential metabolites are predominantly flavonoids, amino acids and their derivatives, including 245 up-regulated and 277 down-regulated ones; green tea’s differential metabolites are mainly organic acids and phenolic acids, with 192 up-regulated and 204 down-regulated. Additionally, dark tea vs. green tea shows differential metabolites mainly as organic acids, amino acids and their derivatives, involving 225 up-regulated and 319 down-regulated. These metabolites enrich 96 KEGG pathways, focusing on amino acid/cofactor biosynthesis, carbon/secondary metabolite biosynthesis, ABC transporters, and flavonoid biosynthesis. Current work contributes to a systematic understanding of non-volatile metabolite differences in LYBH teas.
